Strawberry Cucumber Salad One Star

Ingredients

There's only one word for this perfect summer salad: refreshing. Crispy, cool fruits and veggies are topped with an herbed vinaigrette that's like a gift from the garden on a hot day.
4 Tbsp. rice vinegar
1 1/2 tsp. chopped fresh dill
1 1/2 tsp. chopped fresh mint
1/2 tsp. cumin
1/2 tsp. paprika
1/2 tsp. salt
1/2 tsp. sugar
1/3 cup olive oil
8 Tbsp. shredded light sharp cheddar
2 pints strawberries, quartered
1 (5 oz.) bag lettuce blend
1 English cucumber, peeled and cubed
3/4 cup parsley
4 green onions, chopped
6 radishes, thinly sliced
16 cherry tomatoes, halved

Directions

  1. In large bowl, toss salad ingredients.
  2. In separate bowl, whisk together all vinaigrette ingredients.
  3. Garnish salad on with cheese and serve with vinaigrette on the side.
