Chicken, Rice, and Broccoli Dinner

Ingredients: Add ingredients to List

1 Tbsp. olive or canola oil (2 Tbsp. if using regular, not nonstick, skillet)
4 (4 oz.) boneless chicken breast halves
1 (10.75 oz.) can condensed, reduced-sodium cream of chicken soup
1 1/2 cups water
1/3 cup lemon juice
1/4 tsp. freshly ground balck pepper
1/2 tsp. garlic or onion powder
1/4 tsp. paprika
1/2 tsp. dried thyme
2 cups uncooked Minute Rice Brown Rice
2 cups fresh broccoli florets (about 1 head of broccoli)

directions:

1. Heat olive oil or canola oil in a large, deep nonstick saucepan on medium-high heat. Add chicken; cook 15 minutes on each side or until cooked through. Remove from skillet and put on plate.
2. Whisk cream of chicken soup and water together in a small bowl. Add lemon juice, black pepper, garlic or onion powder, paprika, and thyme. Add mixture to skillet and bring to boil over high heat.
3. Stir in rice and broccoli. Top with chicken and juices from plate; cover. Cook on low heat for 5 minutes. Serve.

Rated 5 out of 5 by from Ms Whitefox This is one of my favorite meals. I make it a little simpler in that I put all the ingredients in a casserole dish cover with foil and cook in the oven for 40-45 minutes until the chicken on top is cooked all the way. Just make sure you add the correct amount of water for the rice and mix in the condensed soup without adding additional water. I also prefer Cream of mushroom soup over cream of chicken and because I cook it in the oven I can use the regular short brown rice which I prefer. It is a quick meal that if you are tired when you get home you can just put it together and put it in the oven and when the alarm goes off check that it is done. Note: on oven method, the last 10-15 minutes take the foil off and add some grated cheese of your choice on top and finish when slightly brown. I prefer both cheddar and mozzarella. It is big on taste and small on effort.
