Slow-Cooker Chicken Tikka Masala

Using low-fat Neufchatel in place of heavy cream lightens up this dish without skimping on flavor. You can find garam masala in the spice aisle. Serve with basmati rice or naan bread.
2 lb. boneless skinless chicken breasts or thighs, trimmed and cut into 1" pieces
1 (28-oz.) can crushed tomatoes
1 Tbsp. garam masala
2 tsp. ground turmeric
Pinch cayenne pepper
Salt and pepper
1 onion, minced
1 Tbsp. minced fresh ginger
3 garlic cloves, minced
4 oz. Neufchatel cheese, cut into 1" pieces
1/4 cup chopped fresh cilantro

directions:

1. Combine chicken, tomatoes, garam masala, turmeric, cayenne, 1 teaspoon salt, 1/2 teaspoon pepper, onion, ginger, and garlic in a slow cooker. Cover and cook on low for 8 hours.
2. Ladle about 1 cup sauce from the slow cooker into a medium bowl, add Neufchatel, and whisk until smooth. Pour sauce back into slow cooker, add cilantro, and stir gently to combine. Season with salt and pepper to taste before serving.

Rated 4 out of 5 by from Different but good I have usually made chicken tikka masala either with one of the widely available simmer sauces or just from a recipe. I have never used heavy cream, just yogurt, so I'm not sure the substitution of Neufchatel cheese is worthwhile, but it worked, and I liked having a short morning prep time and having the meal cook during the day while I did other things. The magazine suggested basmati rice (I served plain basmati), cucumber-mint raita, naan bread and mango chutney. I should have made the raita in advance and then I wouldn't have forgotten the chutney in the pantry!
