Rated 5 out of 5 by from Parboil then cook long and slow I grew up having State of Maine Beans almost every Saturday night. Like my mom, I add more molasses and sugar than the instructions on the bag say to. I start by par boiling in the morning and getting everything going in a crockpot set on high, at the 5 hour point I remove the salt pork and continue cooking on high for a total of 8 or 9 hours. I judge the batch to be done when a “gravy” has formed. It is necessary to stir and add water a couple of times during the day.

Rated 4 out of 5 by from soaking first The beans may be more or less dry, depending on harvest and post harvest drying. Thus soaking overnight with two or three changes of water is important. Next day simmer until skins peel back when you spoon out two or three beans and blow gently on them. Then bake as usual.

Rated 1 out of 5 by from maine beans They did not cook up well. Some of the beans cooked up fine but others stayed as hard as a rock spoiled the whole batch. I will never buy them again or reccomend them.
