Smoky Pork Lentil Stew

Ingredients: Add ingredients to List

2 teaspoons Canola oil
1 large yellow onion, diced
1 lb pork tenderloin, sliced into 1-inch cubes
2 each Garlic cloves, minced
2 cups unsalted or low-sodium vegetable broth
1 each ( 28 oz. can) crushed tomatoes
1 cup dried green or brown lentil
2 large carrots, thinly sliced
2 tablespoons tomato paste
1/2 teaspoon ground chipotle chili powder
2 teaspoons Dijon or grainy mustard
1 teaspoon ground cumin
1/4 teaspoon freshly ground black pepper
1 tablespoon fresh thyme leaves, divided
2 pinchs Fresh thyme sprigs (optional garnish)
2 teaspoons nonfat greek yogurt (optional garnish)

directions:

1. Heat oil in a large saucepan over medium heat. Add onion and cook untilsoftened, stirring often, about 6 minutes. Add pork and garlic; stir untilcubes of pork are browned, about 5 minutes.
2. Add broth, tomatoes, lentils, carrots, tomato paste, chipotle powder, mustard, cumin, and pepper; stir well. Bring to a boil, reduce heat, and simmer uncovered until lentils are tender, about 30 minutes.
3. Stir in 2 teaspoons of the thyme leaves and heat 2 minutes. Ladle into 6bowls and garnish with yogurt if desired and remaining 1 teaspoon thyme and sprigs. Serve immediately.

Rated 4 out of 5 by from Great chili taste! My husband and I loved this recipe although as another review mentioned, it needs some tweaking. The major issue we came across was that it took an hr and a half to make the lentils soft and I needed to add quite a bit more water due to the extra cook time. We covered the dish after the first 1/2 hr. The yogurt on top was great!!!

Rated 3 out of 5 by from Tweaking required This recipe did require some tweaking I did not follow it by the book, although to be honest I never do. I brown the pork first then put the vegetables I have to have my meat VERY tender due to lap band surgery I did have to add more broth and my family loves spice so we added more chili powder. Cook this for as long as possible and wait for the lentils and cook them for as long as possible as well because in a rush we did the same mistake and they were undercooked :-/ however this dish has quite the potential and if you know your way around the kitchen you can make this into something.

Rated 1 out of 5 by from Please tell me that no one received a paycheck for writing, testing and printing this recipe. NO STARS AND 100% WASTE OF TIME & MONEY!!!!!! The picture looked good and the recipe was easy to follow. Since this was a new recipe to us, we followed the directions 100%, knowing that the next time we might adjust it a little. Our first indication that there was an issue was the cooking the onion first then adding the pork to brown. Really? The pork steamed, but couldn’t brown. The pork should be browned first & removed, then, start with the onions adding garlic then browned pork. Next, I initially questioned the timing and liquids for “dried lentils”, but once again, new recipe means follow directions 100%. Recipe called for 2 cups (16 ounces) of vegetable broth, we actually used 8 cups (64 ounces) in our 4 1/2 hour simmer until tender as opposed to the recipe’s “simmer until lentils are tender, about 30 minutes”. Again, I have to say really??? Why not suggest the cup of lentils be soaked overnight (as one would to make soup) or used canned lentils if available. So now, here we are almost 5 hours after bringing to a boil and allowing to simmer and lentils are still not tender. I just wasted hours and over $10.00 in ingredients on this recipe. Again I say: Please tell me that no one received a paycheck for writing, testing and printing this recipe.
